The Ristretto Espresso Shot

What is the ristretto shot of espresso, and can pod users pull ristretto shots?

The ristretto is a short shot of espresso coffee. In the early days of espresso before electric pumps, this meant pulling a hand press harder than usual, thereby increasing the pressure and forcing the water through the ground coffee more quickly. "Since the water came in contact with the grinds for a much shorter time the caffeine is extracted in reduced ratio to the flavorful coffee oils. The resultant shot could be described as bolder, fuller, with more body and less bitterness."

The above is according to Wikipedia. Explanations on the web also talk about increasing the fineness of the grind in order to hold back the flow of water. This results in less coffee volume with greater concentration, but only serves to lengthen the time the water is in contact with the coffee and will dissolve more of the undesirable components (in contrast to the above statement).

Another method is to increase the compaction pressure, or "tamp." Like a finer grind, this also slows down the flow of water, creating a shorter, more flavorful shot, but likewise does nothing to prevent the extraction of undesirable components.

I'm not in a position to further debate what makes a true ristretto shot. There is plenty of debate by more qualified coffee-heads than me. For the sake of this article, a ristretto is simply a shorter, more concentrated shot pulled in the same amount of time (25 to 30 seconds) as a full shot. A full shot is defined as 1 ounce. A short shot would be approximately 3/4 ounce.

So, how can pod users make a ristretto shot? If you have a pod-only machine that clamps the pod on the periphery, you are pretty much out of luck as there is nothing to vary (ironically, one of the great strengths of this type of machine). If you have a traditional home espresso machine that can take ground coffee as well as pods, there is the ability to tighten the portafilter a bit more, thus squeezing the pod and increasing the compaction. However, these machines are not designed for this and achieving consistent results cannot be expected. It is this aspect of traditional machines that contributes to poor quality of pod shots -- one can never quite repeat the exact compression on the pod in these machines.

Lastly, there are the FrancisFrancis! machines with the Trio system. The Trio system is designed to allow extraction of ristretto (short), espresso (normal), and espresso lungo (long) shots from pods. It does so by first, achieving a means of preventing water from flowing around the pod regardless of the compaction applied to the pod, and having achieved this, allows modulation of the compaction pressure by a spring loaded shower screen. Thus by tightening or loosening the portafilter handle, it varies the clamping pressure on the pod, but in a far less critical manner than in an ordinary machine. It thus allows far more consistent and predictable results. I use a FrancisFrancis! X6 machine at home and I am frequently impressed (and re-impressed) with the quality of the espresso shots. I do wish the price of these machines were a bit lower.

What about the espresso lungo (long) shot? Sorry, I cannot imagine why someone would want to make lungos. It just ruins the shot as far as I'm concerned.
